My Fraisier cake recipe is a reminder that the best things in life don’t need to be complicated. Named after the French word for strawberry, fraise, this cake is a celebration of the fruit at its peak—juicy, vibrant, and nestled between layers of a simple yet intentional crème that exist only to make it shine. There’s nothing fussy about it, yet every bite feels thoughtful, balanced, and just indulgent enough to keep you coming back for more.

Its origins trace back to early 20th-century France, when pâtissiers sought to create something that honored the simplicity of strawberries without drowning them in sugar or excess. They landed on a formula that’s stood the test of time—airy génoise sponge, gently soaked in a strawberry syrup, holding together a luscious mousseline cream that’s equal parts rich and ethereal.
And then, of course, those strawberries, sliced just so, lining the edges like little ruby gems, giving the cake its unmistakable charm. The end result is nothing short of masterful when you are lucky enough to pick those berries fresh from the garden. Add in a fresh, flowering mint sprig and you’ve really got yourself a party.
